The Culinary Room Chef is responsible for a specific dining room kitchen, and ensures that the kitchen provides nutritious, safe, eye-appealing, properly flavored food while maintaining a safe and sanitary work environment for all employees. Other duties include menu planning, preparation of budgets, maintenance of payroll, food cost, and other records. Specific duties involving food preparation and establishment of quality standards, training of employees in cooking methods, presentation techniques, portion control and retention of nutrients. All duties are to be performed within the guidelines of the Seneca Gaming Corporation’s policies and procedures, Internal Control Standards and objectives. ESSENTIAL FUNCTIONS AND RESPONSIBILITIES: 1. Report to work well-groomed in full uniform and on time with badge on upper left side of uniform. 2. Provide prompt, friendly, and courteous service of food and beverage to all our guests. 3. Be hospitable, friendly, and polite with all guests, co-workers, and management using positive body language. 4. Evaluate, reward and discipline kitchen personnel as appropriate. 5. Orient and train kitchen personnel in property and department rules, policies and procedures. 6. Train kitchen personnel in food production principles and practices. Establish quality standards for all menu items and for food production practices. 7. Plan and price menus. Establish portion sizes and standards of service for all menu items. 8. Maintain clean work areas, utensils, and equipment. 9. Prepare food in a safe manner dictated by company standards and policies. 10. Schedule kitchen employees in conjunction with business forecasts and predetermined budget. Maintain payroll records for submission to payroll department. 11. Control food costs by establishing purchasing specifications, storeroom requisition systems, product storage requirements, standardization recipes and waste control procedures. 12.
