Primary Duties and Responsibilities : includes but not limited to: Works with the Food and Beverage Operations Manager to achieve the established P&L guidelines Assists in the hiring, training, evaluating, disciplining and scheduling of supervisors and line staff Responsible for the requisition and inspection of all products and the maintenance of inventory par amounts Assists in the preparation of payroll Secondary Duties and Responsibilities: Maintains the health, safety and sanitation of the restaurant in accordance to set guidelines Promotes culinary concept in Marketing and Public Relations efforts Maintains a working relationship with tenant partner and assumes an active role in marketing the restaurant concept Minimum Education and Qualifications: Bachelors’ Degree in Hospitality or Business Administration Three years experience in a high volume complex Food and Beverage or casino environment with at least one year supervisory experience in a gourmet-specialty restaurant In lieu of formal degree, must have two years supervisory experience in a high volume or gourmet themed restaurant Competencies : Incumbent will master the following competencies while in this position: Intermediate knowledge in Micros, Stratton Warren, Word, Excel and Lotus Notes Excellent written and oral communication skills Training Requirements: Must complete and pass the Core Supervisor Training course Excellent understanding of all beverage service techniques, food preparation and products and cooking techniques, including table side service Thorough understanding of P&L evaluation, sales forecasting, budget costs, utilization and Key Volume Indicator anal

Tribal Gaming Employee License
Issued by the specific tribe's Gaming Commission. Each tribal nation sets its own licensing standards in compliance with NIGC Minimum Internal Control Standards (MICS). Must be renewed annually at most properties.

Note: Each tribal nation operates its own Gaming Commission under NIGC oversight. Licensing requirements vary by tribe but generally include a tribal gaming license, FBI fingerprinting, and background check. Common states: CA, MN, WA, AZ, CT, WI, OR, MT, OK, NM, ID, WY.
