Wynn Resorts is seeking a highly organized and process-driven Project Manager to support the Senior Vice President of Food & Beverage Development by leading project management and procurement coordination across the F&B Development portfolio. This role serves as the operational backbone of the department — partnering with resort operations teams, purchasing, internal departments, and external vendors to maintain compendiums, drive timelines, manage processes, and deliver timely, frequent updates to all stakeholders. The Project Manager ensures our operators have the tools, information, and support they need to successfully elevate F&B programming across Wynn Las Vegas, Encore, and Wynn Al Marjan Island. The ideal candidate is a strong team player and an equally strong self-starter who thrives with limited direct oversight, anticipates what is needed, and consistently moves work forward. Key Responsibilities: Manage end-to-end project timelines for new F&B openings, re-concepts, and ongoing operational initiatives across the global portfolio. Maintain and continuously update F&B Development compendiums, trackers, and project documentation, ensuring a single source of truth for all stakeholders. Partner with resort Purchasing teams to coordinate sourcing, ordering, lead-time tracking, and on-time delivery of operating supplies and equipment. Serve as the day-to-day liaison between F&B Development, Operations, Culinary, Purchasing, Finance, Design, and other resort departments. Manage vendor communications and relationships — issuing purchase order requests, monitoring fulfillment, escalating issues, and tracking supplier performance. Produce regular status reports, dashboards, and stakeholder updates that keep operators and executive leadership aligned on progress, risks, and decisions.
