The Senior Cook should possess expertise in a specialized method or style of cooking. The ability to demonstrate entertainment value or produce specialty foods also qualifies. Assist Sous Chefs in all culinary functions. All duties are to be performed within the guidelines of the Seneca Gaming Corporation’s policies and procedures, Internal Control Standards and objectives. ESSENTIAL FUNCTIONS AND RESPONSIBILITIES: 1. Insure food items are properly stored, including raw materials and prepared items. 2. Inspect all outgoing orders are properly prepared, i.e. portion control, garnished correctly for presentation. 3. Insure all items are available for consumption by guest, i.e. soups, sauces and gravies are available prior to restaurant opening, as well as assembling supplies and equipment needed for daily cooking. 4. Take inventory of all meats and seafood. Requires knowledge of food items and products that are needed as well as amounts needed. 5. Coordinate food orders to proper cooks. 6. Prepare all food items with strict adherence to food specifications set out in recipe manual. 7. Review production schedule to determine food requirements including variety and quantity of food preparation. 8. Complete production sheets and other records in conjunction with Sous Chefs as required. 9. Maintain clean work areas, utensils, and equipment. 10. Regulate temperatures of ovens, broilers and grills. 11. Maintain proper food temperatures in accordance with regulatory and/or ServSafe standards. 12. Properly label, date & rotate all products to ensure safe keeping and sanitation. 13. Must have command of all stations of the kitchen, i.e. roast, fry, pasta, vegetable, grill, pantry, breakfast, sauté and high volume quantity cooking. 14. Must have the ability to work with Sous and Room Chefs in conjunction with daily operations. 15. Incumbent will be responsible for teaching and mentoring Cooks and Production Cooks. 16.
